2000 Main Street Cabernet Sauvignon

VINEYARD INFORMATION

The grapes for this bottling were sourced entirely from Main Street Vineyard, our estate vineyard in St. Helena, from an exceptional vintage.

WINEMAKING

The 100% free run juice was fermented at 75 degrees Fahrenheit using the delastage method favored by Bordeaux chateaux - what we sometimes refer to as "rack and return." In this technique, the winemakers drain a tank of juice and transfer it to another tank, then return the juice to the fermenting tank, splashing it over the fallen cap of skins. This effects a more thorough maceration, resulting in enhanced color and flavor extraction. We have also incorporated seed removal with the delastage. This reduces the levels of seed tannins in the wines which are harsher and more astringent than the skin tannins. The wine underwent a 14 day maceration and was racked to 100% new oak barrels where it aged for 26 months.

WINEMAKER NOTES

This Cabernet Sauvignon is deep purple in color, with aromas of black fruits and notes of anise, mint, vanilla. On the palate, the wine is exceptionally textured, rich, velvety, and mouth-filling. Juicy blackberry, blueberry, and blackcurrant flavors are accented with mocha and coffee.
