2004 Lewelling Cabernet Sauvignon

Napa Reserve Vista Montone Pinot Noir
VINEYARD INFORMATION AND HISTORY
The 22-acre Lewelling Vineyard is located west of Highway 29 at the base of the Mayacamas Mountains in St. Helena. It is a gently sloping, benchland site that over the years has earned a reputation as one of the top vineyards in Napa Valley yet only a few producers are given the privilege of displaying the Lewelling name.

WINEMAKING
After a cold pre-soak, the grapes were fermented using the rack-and-return method (delestage) favored by leading Bordeaux chateaux. In addition to increasing color and flavor, this process allows for the removal of seeds, which reduces astringency and produces more supple tannins. To further soften tannins and create a more generous texture, the wine was exposed to air during fermentation and aging. This vintage spent 20 months in Center of France barrels, 33% new, 7% one year old and the remainder two years old. To preserve the texture and character of the fruit, this Cabernet received only a light filtration.

WINEMAKER NOTES

Deep jewel tone red in color, this 2004 is redolent with aromas of plum and rose petals. Lush velvety smooth tannins cradle chocolate covered cherry flavors.

CHEF NOTES

The chocolate cherry notes of the wine beg for a gourmet beef tenderloin dish. Our winery chefs often prepare a cherrywood smoked beef tenderloin with a black cherry cabernet sauvignon demi-glace when pouring the Lewelling Cab.
